Caraway Seed Cake

8 oz / 110 g self-raising flour
2 tsp baking powder
6 oz / 175 g butter
6 oz / caster sugar
3 oz / 75g mixed peel
2 eggs, large
1 tbs water
1 oz / 25g Caraway Seed
Preheat oven to 165C / 330F / gas mark 3 1/2
Line a 6inch cake tin with greased paper.
Cream the butter and sugar in a blender until light and fluffy. beat in the eggs one at a time. Stir in the flour and baking powder, then the caraway seeds, mixed peel and water. Pour into the prepared tin and bake in the centre of the oven for 1 1/4 – 1 1/2 hours or until a skewer comes out clean.
